The Hothouse

Bundaberg ginger beer

Muddle the chili and basil with a touch of simple syrup. Combine all but the ginger beer, shake and fine-strain into an ice-filled pilsner glass. Top with a little Bundaberg, and garnish with a few slices of chili and some basil chiffonade.

The chef gave me some grief about using basil this time of year, but sometimes enthusiasm trumps seasonality. I've been enjoying a lot of Thai food and felt the whole chili-lime-basil base was perfect for a cocktail.

Muddle pineapple. Shake and fine-strain into a cocktail glass. Garnish with three espresso beans.
Layers and layers of tasty goodness. If you've never used Velvet Falernum, you should. It's a liqueur (or cordial depending on the brand) with deep clove-almond-lime flavors... really shines in fruit-driven cocktails.

Muddle kumquat and mint, combine ingredients and shake. Strain (not fine-strain) into an ice-filled bucket. Garnish with a sprig of mint.

Do svidaniya (pronounced DUH svee-DAH-nee-yeh) means "until we meet again" in Russian. Why Russian? Because it's a vodka cocktail, of course. Never mind that it's made with Swedish vodka, or that we don't even carry a Russian vodka!

This is a variation on another Range cocktail called The Black Hat. Gotta love that walnut liqueur! NOTE: This should not be confused with the classic "Foxtrot Cocktail", which has light rum, lemon juice and curacao. Sometimes we pick a name that's already been used... oh well.

We made the earl grey simple syrup by brewing a few strong pots of loose-leaf earl grey, and mixing 1:1 with sugar. Chill syrup in advance to prevent dilution of your cocktail.

This one takes a bit of work, but it's worth it! Make sure to use 1/4 oz. or less absinthe or you'll lose the kiwi. A variation of this on is going on the list soon... stay tuned!

This simple concoction is a great way to introduce people to the wonders of Luxardo. It's powerful stuff, though, so only use around 1/4 ounce. Too much, and it becomes medicinal; too little, and it gets lost in the mint and lime.

Typical rum is made from molasses, whereas rhum agricole is made from "fresh" sugar cane juice. This makes for a lighter, brighter taste excellent for mixing. The "rhum vieux" are rhums that are aged over three years, and are perfect for sipping neat.

"Genever" (simply Dutch for juniper) has a slightly sweeter, rounder gin than London Dry style gins (Beefeater, for example), and is made by malting the grain before distilling. Genevers are also aged for a bit in oak, thus softening the potentially medicinal edge of the botanicals.

What can we say? The Pisco Sour is delicious as is, but why not take advantage of the berry season? The dash of madeira keeps it from getting too sweet, and brings out the complexity of the Pisco.

Muddle ginger, combine ingredients, shake, fine strain. Served up with a burnt lemon chip.

To flame the lemon simply warm the chip (zest down) over a lit match for a moment. Hold the match between the chip and the cocktail, then squeeze. The citrus oil will shoot out in a mist over the flame and ignite, causing bar patrons to stop and say "ooooo!". Burning the lemon chip is more than just a nifty bar trick. The aroma of the burnt lemon oil coats the top of the drink and provides an inviting first impression, much like a fresh basil leaf on a caprese salad does.

This is the sexy sister of the Brooke classic, Vin de Pamlemousse, which had grapefruit, vodka, white wine, vanilla, and lemon. We changed the name to "Summer Lovin'", and put it on the list.

Chicha morada is a traditional non-alchoholic Peruvian beverage made from purple corn, pineapple, apple and cinnamon. Brooke got this batch from Range/Beretta veteran Enrique Sanchez, and found it to be a perfect match with Pisco.

This fine rum punch was the creation of guest-tender Mike LaFreniere. It's a tall, cool drink that made us all wish we were in the Caribbean under a palapa with our toes in the sand. Damn these San Francisco "summers".

Muddle ginger. Combine ingredients, shake, fine strain and serve up. Garnish with a mint leaf.

The "buck" is a classic cocktail term that means ginger is being used in some way. The classic Gin Buck is the impish sister of the Dark and Stormy, and is comprised of gin, lemon, and ginger ale. We wanted something even softer and more elegant, so we mixed equal parts Lillet and vodka, a splash of Canton, a few mint leaves, a chunk of ginger (muddled) and 1/4 lemon. Light & easy with a hint-o-mint and a good ginger backbone.

Shake & serve up with a lemon twist.

Brooke made some apricot infused brandy which is tasty, but (let's be honest) pretty ugly. Apricots tend to oxidize quickly if uncooked, so what came out was a muddy brown booze. Actually, it was appropriate since she just returned from Tales of the Cocktail in New Orleans... mix in a little whiskey, and you got yerself a damn tasty beverage.

This is a Mike LaFreniere creation through and through. Just when you thought he was making a "normal" cocktail, wham! he throws in some creme de cacao. Sounds odd... tastes delicious.

Beer can be a delicious addition to many fruit-based cocktails. The wit beer used in this one brings out the citrus and adds a touch of spice.

This one went over pretty well. We went though almost three bottles of tequila, and we actually ran out of the house made puree. Can't go wrong with tequila and berries!

It's funny. The previous night's melon drink, "The Palindrome", took a lot of tweaking before we got the proportions just right, yet we hit this one on the first try. I suppose simplicity wins almost every time.

Shake, fine strain and serve up. Garnish with three small melon balls.

Pal-in-drome (pal'-in-drom): A word, sentence, verse, etc., that is the same read forward as it is backward, as "Madam, I'm Adam". To be perfectly honest, we had a hard time thinking up a name for this one, but we noticed that "melon" and "lemon" almost created a palindrome... so there you have it. Bartender + Nerd = obscure linguistic reference.

We had a similar drink on our list a while back called "Smokey and the Bandit" which included a smoky mescal liqueur. "The Bandit" lacks the mescal and the smokiness... hence the name.
