I saw these little cherry-sized plums at the farmer's market and just couldn't resist. They have a sour, very green taste which adds a nice amount of acid and spring flavor.

Mint simple syrup is a great alternative to muddling. Just make a 1:1 simple syrup and bring to a simmer. Remove from the heat and toss in a handful of mint and allow to cool. Strain out the mint, and ta-dah!

This cocktail has a classic aperitif profile: Clean and crisp, but with enough intriguing herbal-fruit notes to really wake up your appetite. The name comes from the Palomino Fino grape from which sherry is made.

He served 19 years as mayor of San Francisco all throughout Prohibition, and his last two-and-a-half years as governor of California. During his tenure he remained lax on Prohibition restrictions, and in doing so established SF as the cocktail capital of the United States. We love Sunny Jim!

Okay, the origin of this name is very convoluted: It started out as a variation of the Range classic Third Rail, so we wanted a name that somehow related. Since Aniversario rum is from Venezuela, we decided to use Spanish, and since one of our servers (Alejandra) is Venezuelan, we asked her for advice. She suggested "La Lampara" because it's a Venezuelan term which literally translates to "lamp" but is the equivalent of "third wheel" in English. Good enough!

Lightly muddle the mandarins, shake ingredients and dump the contents into a bucket. Top with sparkling wine. No garnish needed.

This was another one of Mike La Frenier's brilliant concoctions. Bright and refreshing, but with a nice depth and weight.

Good stuff!!! Normally I try to use fewer ingredients than this, but it came out well balanced and surprisingly uncluttered on the palate.

This makes an excellent aperitif. It has a great balance between the sweetness of the Dubonnet and the herbal notes of the Plymouth and Noily Pratt.

Here's a classic cocktail pulled from Charles Barker's South American Gentleman's Companion (which incidentally is one hell of an amusing read!). This cocktail has amazing depth, a complex nuttiness, and refreshing celery finish. Time to make some celery bitters!

We used a domestic nebbiolo/barbera blend which is relatively low in acid, juicy and concentrated. The Drambuie and raisins add a nice earthy-smokey note.

There's something about blood oranges that makes people go crazy. We used up two and a half bottles of rum that night, which means that one out of four people ordered a Monk's Blood.

Clean and fresh. The lavender does a little dance with the rose in the Hendrick's, but it's not too floral.

Persimmons can be tough to muddle because they have to be almost too ripe to handle. We made a puree (with a little lemon juice), and ta-dah! Great viscosity and richness.
