Machu Pisco
quince syrup
lime juice
apple juice
egg white
cinnamon bitters
Dry shake. Add ice and shake vigorously. Fine-strain into an ice-less rocks glass and garnish with a few drops of cinnamon bitters.
Our pastry department made a ton of candied quince and we got the extra syrup. So much so that we're putting this one on the menu for a while.

How do you make Quince Syrup?
Our pastry department makes candied quince by simmering the fruit in a concentrated simple syrup (2:1). They Use very low heat and a lot of time. They keep the fruit, the bar gets the syrup.
Ah, I see the comment above now about the pastry dept. Hm, as it will be around for "a while" hopefully I can mosey over before that period is over. Seems more likely than me actually making quince syrup myself.
