The Hothouse

Pueblo Viejo silver tequila
Chartreuse
lime juice
basil
Fresno chili
sugar
Bundaberg ginger beer

Muddle the chili and basil with a touch of simple syrup. Combine all but the ginger beer, shake and fine-strain into an ice-filled pilsner glass. Top with a little Bundaberg, and garnish with a few slices of chili and some basil chiffonade.

The chef gave me some grief about using basil this time of year, but sometimes enthusiasm trumps seasonality. I've been enjoying a lot of Thai food and felt the whole chili-lime-basil base was perfect for a cocktail.

Pueblo Viejo silver tequila
Velvet Falernum
pineapple
lime juice
cinnamon bitters

Muddle pineapple. Shake and fine-strain into a cocktail glass. Garnish with three espresso beans.
Layers and layers of tasty goodness. If you've never used Velvet Falernum, you should. It's a liqueur (or cordial depending on the brand) with deep clove-almond-lime flavors... really shines in fruit-driven cocktails.

pomegranate juice

Shake it and fine-strain into a cocktail glass. Top with sparkling wine and garnish with an orange twist.

A little holiday variation on the ol' French 75.

Do Svidaniya

Svedka vodka
mint
kumquat
kumquat simple syrup
lemon juice

Muddle kumquat and mint, combine ingredients and shake. Strain (not fine-strain) into an ice-filled bucket. Garnish with a sprig of mint.

Do svidaniya (pronounced DUH svee-DAH-nee-yeh) means "until we meet again" in Russian. Why Russian? Because it's a vodka cocktail, of course. Never mind that it's made with Swedish vodka, or that we don't even carry a Russian vodka!

Shake and fine-strain into a cocktail glass. Garnish with an orange chip.

Last week we did this one with Old Overholt rye... works even better with a little repo.

Pomegranate Margarita

pomegranate juice
lime juice
agave nectar

Shake ingredients and strain into an ice-filled bucket. Garnish with a lime wedge and a few pom-seeds. Salt on request.

A no-brainer. A delicious, seasonal no-brainer.

Nocino della Cristina walnut liqueur
Marie Brizard creme de cocoa
cinnamon bitters

Stir ingredients and serve up in a chilled cocktail glass. Garnish with a lemon chip.

Sounds like a strange combination? Yes, but it works beautifully. Just treat the sweet elements like you would bitters.

Foxtrot

Cerbois Armagnac
Punt e Mes
Nocino della Cristina walnut liqueur
Angostura orange bitters

Stir ingredients. Strain into an ice-filled rocks glass and garnish with fresh nutmeg.

This is a variation on another Range cocktail called The Black Hat. Gotta love that walnut liqueur! NOTE: This should not be confused with the classic "Foxtrot Cocktail", which has light rum, lemon juice and curacao. Sometimes we pick a name that's already been used... oh well.

The Old Cuban

Flor de Caña 7 year rum
mint
lime juice
simple syrup
Angostura bitters

Gently muddle the mint. Combine and shake ingredients. Fine strain into a cocktail glass, then top with dry sparkling wine. Garnish with a mint leaf.

This classic cocktail starts like a dark mojito, but finishes with a bit more sophistication.

Old Overholt rye whiskey
egg white
buddha's hand syrup
lemon juice

Dry shake. Add ice, shake. Fine strain into a cocktail glass and float a bit of dry red wine (we used Cabernet Franc).

Our pastry department is pumping out tons of buddha's-hand citrus syrup, so we thought it would be perfect for a frothy sour. We were right.

This unlikely combination is the crazy love-child of the Chili Davis and the Third Rail. Not pretty to look at, but rich and delicious on the ol' palate.

Shake it up and strain into an ice-filled bucket. Garnish with pomegranate seeds.

We were closed for a private party. It was Gary's 70th birthday, and we made about 8000 of these cool beverages for his family and friends. Happy birthday!

Burnt Rose

La Guitana manzanilla sherry

Shake. Fine-strain into a cocktail glass and garnish with a flamed lemon chip.

Just because the flaming lemon looks cool doesn't mean it's just for show. This cocktail is tasty by itself, but it really comes alive with the flame.

Downtown Brown ale

Muddle a chunk of pear. Combine ingredients, shake, then fine-strain into an ice-filled bucket. Top with brown ale, and garnish with a star anise pod.

Yes, we know: There are a thousand ingredients in this beverage. But it works so well!

The Icelandic

Qi White Tea liqueur

Shake and fine-strain into a cocktail glass. Garnish with a lemon chip.

Martin Miller's gin is distilled in England, but they get their water from glaciers in Iceland. Not a great carbon footprint, but a damn tasty gin!

Celtic Old Fashioned

Mcquade Celtic Fig Chutney

Shake vigorously and fine-strain into a cocktail glass. Garnish with an orange twist.

Not a classic old fashioned by any stretch of the imagination, but tasty, nontheless.

Blackberry Cobbler

Stir and strain over crushed ice. Garnish with a large sprig of mint.

The "cobbler" is a classic type of cocktail that consists of a spirit (or some form of wine), sugar and fresh fruit. These beauties need to make a comeback as far as we're concerned!

Shake and fine-strain into a cocktail glass. Garnish with a thin slice of persimmon.

Even with the port and cider, the honey comes through beautifully.
